Считается, что традиция подавать на Рождество панеттоне возникла еще в 13 веке.
Существует несколько легенд о том, как появился рецепт этого пирога. Наиболее известна романтическая версия о молодом дворянине, который влюбился в дочь бедного пекаря Тони. Легенда гласит, что молодой человек, чтобы произвести впечатление на отца девушки, переоделся пекарем и изобрел сладкий хлеб с изюмом, засахаренным лимоном и цедрой апельсина. Современный вид и вкус панеттоне получил сравнительно недавно, только в прошлом веке. Изобрел современную версию панеттоне итальянский кондитер Анжело Мотта (Angelo Motta). И компания Motta является одним из главных производителей рождественских пирогов в Италии.
Классический панеттоне весит около 1 килограмма (2,2 фунта) и имеет куполообразную форму высотой около 21 сантиметра (8 дюймов). Чтобы приготовить панеттоне требуются следующие ингредиенты – вода, мука, яйца, соль, молоко, сливочное масло, сахар, ваниль, дрожжи, изюм и цукаты.
Вначале пекарь замешивает тесто из воды, муки и дрожжей и оставляет его на час подниматься. Через час, когда тесто увеличилось в объеме в два раза, добавляют яйца, изюм и цукаты. Тесто перемешивают и снова оставляют настаиваться, на этот раз на 12 часов при температуре 30°С. Затем тесто еще раз вымешивают и оставляют еще на один час, только потом отправляют его в печь.
Так как приготовление панеттоне довольно длительный процесс, то итальянцы предпочитают покупать его в магазине. Кстати, если не вскрывать упаковку, то панеттоне может храниться довольно долго, 3 – 4 месяца.
Традиционно панеттоне подают вместе с кофе или горячим шоколадом, или с бокалом сладкого итальянского вина спуманте или просекко. Перед подачей можно разогреть панеттоне в теплой духовке в течение нескольких минут.
